Carbonara Pasta

Good day fellow Food Space Asia readers! With Christmas just around the corner, I bet you guys are planning on what to prepare for your Christmas dinner. 

Worry not! Today we're going to share with you how to make a Carbonara Pasta!

The recipe is simple and the ingredients are easy to find and the highlight here is the creamy Carbonara sauce. We're making a vegan sauce this round! 

For this rich and creamy Carbonara Pasta, you need to prepare:

    For the sauce

    • 10 ounces gluten-free spaghetti
    • Carbonara sauce
    • 1 Tbsp olive oil
    • cloves garlic (minced)
    • 2 Tbsp onion (minced)
    • 1 cup finely sliced button mushrooms
    • Sea salt and black pepper to taste

    Once you have all the ingredients ready, let's start by preparing the Carbonara sauce. Have all the ingredients for the sauce in a food processor and start blending. Blend until creamy and smooth, scraping down sides as needed. Taste and adjust flavour as needed.

    Next, prepare a pot of water to a boil and season generously with sea salt. Add pasta and boil according to package instructions, then drain and set aside. 

    At the same time, heat up your pan over to medium-high heat. Once hot, add olive oil, garlic, ginger, and mushrooms. Sauté for 3-4 minutes, stirring frequently, until the mushrooms are slightly browned. Season with a healthy pinch each salt and pepper and stir.

    Maintain at medium and add in the Carbonara sauce. Stir occasionally then reduce heat to low to keep warm. Add the cooked drained pasta directly to the sauce along with sautéed mushrooms.

    Toss to coat and enjoy immediately! You can have additional vegan parmesan cheese on your pasta. This hearty Carbonara Pasta is entirely gluten-free and vegan and it only requires just 30 minutes to prepare!
